Vegan Mushroom Tacos – red reishi, cordycep, lionsmane

 1 onion , thinly sliced
 4 cloves finely chopped garlic
 1 thinly sliced bell pepper
 12 oz sliced mushrooms
 ¼ cup orange juice
 3 tsp lime juice
 2 tbsp lemon juice
 1.50 tbsp soy sauce
Carnitas Spices:
 1 scoop of KOS red reishi
 1 scoop of KOS cordycep
 1 scoop of KOS lionsmane
 1 tsp ground cumin
 1.50 tsp smoked paprika
 2 tsp ground coriander
 1.50 tsp tsp oregano
  black pepper, to taste
Step

Preheat the oven to 400 deg F.

Line a baking dish with parchment.

Add the sliced onion, garlic, jalapeno, mushrooms to a large bowl.

Add the orange juice, lime and soy sauce and toss to mix well.

Let it sit to marinate for 10 mins to an hour.

Mix the ground spices in a small bowl and sprinkle on the mushrooms. Toss well to coat.

Drop the mushroom mixture onto parchment lined baking dish.

Spread the mixture around so it forms a mostly single layer.

Bake for 30 mins, then move the mushrooms around so the ones on the edges dont burn.

Bake for another 5 to 15 mins depending on preferred browning.

Mix in lemon juice.

Serve in tacos with mashed avocado/guacamole, jalapeño, vegan sour cream, or salsa. Add some cooked beans for added protein. Enjoy!
