Blend until smooth.
If you prefer some texture, add a handful of diced fresh strawberries and pulse a few times to incorporate.
Pour the red mixture into the popsicle molds, filling them approximately one-third of the way up.
Insert the popsicle sticks and freeze for at least 2 hours or until partially set.
In the blender, combine coconut meat chunks, water, maple syrup (if using).
Blend until smooth and creamy.
