Prepare to embark on a journey of taste and texture with these Chia Pudding Cups. As you take your first spoonful, relish in the silky-smooth chia seeds that have absorbed the flavors of your chosen milk, vanilla extract, and maple syrup. Each layer reveals a vibrant burst of color and flavor, transforming a simple pudding into a work of art.

In a large bowl, combine chia seeds, milk, vanilla extract, and maple syrup (if desired). Whisk the mixture until well combined. Allow it to sit for a few minutes, then whisk again. Cover the bowl with a lid and refrigerate for at least 4 hours, ideally overnight, to allow the chia pudding to set.
Once the chia pudding has set, prepare two additional bowls. Divide the pudding into thirds, placing 1/3 of the pudding into each bowl. Set aside the remaining 1/3 in its original white color.
In one of the bowls, add 1/2 tbsp of blue spirulina (adjust the amount for a richer color) and mix it thoroughly with the pudding.
In the other bowl, add the purée 1/2 cup of strawberries and mix it with the pudding to achieve a delightful red hue.
In serving cups, layer the three colors of chia pudding—white, blue, and red—for a visually stunning treat. Feel free to get creative with the layering order and patterns. Top the cups with sliced strawberries, blueberries, and coconut chips for an optional garnish.
Sit back, relax, and enjoy the delightful and nutritious Chia Pudding Cups!
