Per 6 servings
 600 g soft tofu
 400 ml coconut milk
 ¼ cup granulated sugar or sugar substitute of choice
 ¼ cup flour
 3 tbsp arrowroot powder or cornstarch
 1 tsp vanilla extract
 1 tbsp lemon juice
 1 tbsp lemon zest
 pinch of salt

Line a 20cm spring form cake pan with two layers of parchment. Preheat the oven to 400F.

Combine all ingredients in a blender or stand mixer until completely smooth.

Pour into the cake pan. Bake for 50-60 minutes, until browned on top. If the cake is not browned to your liking, you can turn on the broiler at 400 and brown in 1 minute increments.

Remove from the oven and allow to cool. Place in the fridge for at least 4 hours, ideally overnight. Enjoy!
