Dry ingredients:
 ½ cup old-fashioned oats⁠
 ½ cup 1:1 flour⁠
 ½ tbsp baking powder⁠
 ¼ tsp salt
 1 tsp pumpkin pie spice⁠
 ¼ tsp ceylon cinnamon⁠
 pumpkin seeds for topping (optional)⁠
Wet ingredients:⁠
 3 tbsp date syrup⁠
 ½ tsp vanilla extract⁠
 ¾ cup pumpkin purée⁠
 ¾ cup unsweetened macadamia milk⁠

Whisk all dry ingredients together in large mixing bowl⁠.

Whisk all wet ingredients together in medium mixing bowl⁠.

Add wet ingredients to dry and mix until combined⁠.

Fill muffin liners with batter and top with pumpkin seeds⁠.

Bake at 400F for 10 min then reduce heat to 350F and bake 12-15 more minutes.
