Vegan Coffee Protein Smoothie
Indulge in something sweet – the healthy way – with this delicious Vegan Coffee Protein Smoothie.
Serves 1-2 10 oz smoothies
2 cups frozen cauliflower rice (may substitute with frozen butternut squash)
2-3 tbsp peanut butter or peanut butter powder
Handful of ice cubes
¼ cup dairy-free milk
1 ¼ cups cold brew
Optional: Handful of softened dates or date syrup to taste. If using concentrate, add a bit more milk to compensate for less liquid.

Pour all ingredients into a high-speed blender. Combine until smooth, adding more milk as necessary - according to desired thickness.
